Here's a classic South Indian Tomato Rasam recipe! Rasam is a tangy, spiced soup made with tomatoes, tamarind, and a blend of spices. It’s flavorful and comforting, often served with rice or enjoyed as a light soup.
Ingredients
For the Rasam Base:
- 3 medium ripe tomatoes, chopped
- 1 lemon-sized ball of tamarind (soak in warm water, extract pulp)
- 4 cups water
- 1 tsp turmeric powder
- 1 tbsp chopped coriander leaves (for garnish)
For the Rasam Spice Powder:
- 1 tsp black peppercorns
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2-3 dry red chilies
- 1 tsp toor dal (split pigeon peas)
- 1/2 tsp mustard seeds
For Tempering:
- 1 tbsp ghee (or oil if vegan)
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- A pinch of asafoetida (hing)
- A few curry leaves
Instructions
Step 1: Prepare the Spice Powder
- In a pan, dry roast peppercorns, cumin seeds, coriander seeds, dry red chilies, toor dal, and mustard seeds on low heat until they release an aroma. Set aside to cool.
- Grind the roasted spices into a coarse powder using a mortar and pestle or a spice grinder.
Step 2: Prepare the Rasam Base
- In a pot, add the chopped tomatoes and 1 cup of water. Let it cook until the tomatoes soften.
- Use a potato masher or the back of a spoon to mash the tomatoes, creating a chunky base.
- Add tamarind pulp, turmeric powder, and 2-3 more cups of water. Stir well.
- Add the freshly ground spice powder and salt to taste. Let it simmer for 5-10 minutes until all flavors are well combined.
Step 3: Temper the Rasam
- Heat ghee in a small pan. Add mustard seeds and let them splutter.
- Add cumin seeds, a pinch of asafoetida, and curry leaves. Fry for a few seconds until aromatic.
- Pour the tempering over the simmering rasam and mix well.
Step 4: Garnish and Serve
- Garnish with chopped coriander leaves.
- Serve hot with rice or enjoy as a warm, comforting soup!
Tips
- Adjust pepper and chili to make it as mild or spicy as you like.
- For added flavor, you can add a small piece of jaggery (unrefined sugar).
