Indian Tomato Rasam recipe!

Here's a classic South Indian Tomato Rasam recipe! Rasam is a tangy, spiced soup made with tomatoes, tamarind, and a blend of spices. It’s flavorful and comforting, often served with rice or enjoyed as a light soup.

 

 Ingredients

  • For the Rasam Base:

    • 3 medium ripe tomatoes, chopped
    • 1 lemon-sized ball of tamarind (soak in warm water, extract pulp)
    • 4 cups water
    • 1 tsp turmeric powder
    • 1 tbsp chopped coriander leaves (for garnish)
  • For the Rasam Spice Powder:

    • 1 tsp black peppercorns
    • 1 tsp cumin seeds
    • 1 tsp coriander seeds
    • 2-3 dry red chilies
    • 1 tsp toor dal (split pigeon peas)
    • 1/2 tsp mustard seeds
  • For Tempering:

    • 1 tbsp ghee (or oil if vegan)
    • 1/2 tsp mustard seeds
    • 1/2 tsp cumin seeds
    • A pinch of asafoetida (hing)
    • A few curry leaves

Instructions

Step 1: Prepare the Spice Powder

  1. In a pan, dry roast peppercorns, cumin seeds, coriander seeds, dry red chilies, toor dal, and mustard seeds on low heat until they release an aroma. Set aside to cool.
  2. Grind the roasted spices into a coarse powder using a mortar and pestle or a spice grinder.

Step 2: Prepare the Rasam Base

  1. In a pot, add the chopped tomatoes and 1 cup of water. Let it cook until the tomatoes soften.
  2. Use a potato masher or the back of a spoon to mash the tomatoes, creating a chunky base.
  3. Add tamarind pulp, turmeric powder, and 2-3 more cups of water. Stir well.
  4. Add the freshly ground spice powder and salt to taste. Let it simmer for 5-10 minutes until all flavors are well combined.

Step 3: Temper the Rasam

  1. Heat ghee in a small pan. Add mustard seeds and let them splutter.
  2. Add cumin seeds, a pinch of asafoetida, and curry leaves. Fry for a few seconds until aromatic.
  3. Pour the tempering over the simmering rasam and mix well.

Step 4: Garnish and Serve

  1. Garnish with chopped coriander leaves.
  2. Serve hot with rice or enjoy as a warm, comforting soup!

Tips

  • Adjust pepper and chili to make it as mild or spicy as you like.
  • For added flavor, you can add a small piece of jaggery (unrefined sugar).
